Fluffy Homemade Potato Gnocchi

These homemade vegan gnocchi are super easy, fluffy small potato dumpling that are fast to make with only 4 ingredients!

How to make the best homemade vegan gnocchi

Step 01: Make the potato dough.

For the potato dough, you just have to cook some whole potatoes in the oven until it’s fork-tender. Then drain them, make sure they’re dry.

After that peel and smash them with a potato smasher. Allow to cool, then mix the mashed potatoes with a bit of flour, salt,and a pinch of nutmeg. The dough should be not sticky. so if you feel it needs more flour, you can sprinkle a bit.

Step 02: Form the shape you desire.

Roll half of the dough along (look at the picture on the left) into a thick rope. Cut the rope into little balls. Though it’s fine to make the typical gnocchi shape- gnocchi grooves, which helps the sauce to stick to the gnocchi. you can skip that step like me and just cook the little balls as they look. It saves a lot of time.

Step 03: Cook the gnocchi.

Once, you have prepared the gnocchi, you can either freeze them if you want them for late use. or cook them immediately.

All you need is to bring a big pot of salted water to a boil. The drop in the gnocchi and simmer in batches until tender, about 4-6 minutes. So once they float to the top, they’re done.

If you want to pan-fry them, bring a little oil or vegan butter and cook until brown and crispy.

Can you make the gnocchi in advance?

yes! I actually recommend making it in advance, because it will firm up a bit after cooking. But you can also enjoy it right away!

You can heat it either in the sauce that it’s being served in, in boiling water, or toasted in a pan as I did! It’s my favorite!

There are so many ways to enjoy gnocchi, serve it with your favorite sauce, seasoning, or however you really want!

Materials

  • 500 g potatoes
  • 1 1/2 cup all-purpose flour or sub gluten-free flour
  • 1/2 tsp salt
  • a pinch of nutmeg
  • extra flour to sprinkle

Instructions

  • Cook potatoes in a pot of salted water until fork tender, about 20 minutes or bake if you have time.
  • Peel the hot potatoes and smash them in a large bowl. Allow to cool.
  • Add flour, salt and nutmeg. Mix with your hand to combine, add more flour if needed until the dough isn't sticky anymore.
  • Take the dough out of the bowl and transfer it to a floured working surface, form it into a flat ball then cut half of it. Take on half and roll it along into a long thick rope.
  • Now cut the thick rope into small balls. You can freeze or cook them now.
  • If you decided to cook them, bring a salted water to a boil. Then drop in the gnocchi and cook until they float to the top, for about 4-6 minutes. Once they're done, remove them with a slotted spoon and drain well.
  • Now you can pan-fry them in a little oil or vegan butter until golden brown and crispy.
